Mashed Potato Cakes


– 2 cups mashed potatoes or sweet potatoes
– 1 egg, lightly beaten
– ¼ cup flour
– 2 tablespoons grated Cheddar or Parmesan cheese
– 2 tablespoons butter
– Sour cream, applesauce, or cranberry sauce, for serving

Preparation Instructions:

1) Preheat oven to 400°F. Lightly grease a baking sheet.2) In a large bowl, combine mashed potatoes, eggs, flour, and cheese. Divide mixture into 6 equal portions, and shape each into a thick patty. Transfer patties to prepared baking sheet. Bake 15 minutes, flip over, and bake an additional 15 minutes. Serve warm with sour cream, applesauce, and/or cranberry sauce.
